Gypsey & Musquito is named after two bushrangers from Tasmania. Their menu consists of items that utilise local and native produce, making for a food that is very interesting and different from the norm. The last page of the menu described the origin and flavours of many of the native ingredients, which was a nice touch, and probably saves the staff from explaining things so many times. Located on the corner of Church St and Lincoln St, Tree of Us mainly serves burgers, though they also do breakfast and coffee. I ordered the Fish Burger with crumbed rockling with tomato, lettuce, beetroot, dill mayo and pickle ($15). A2 had the Sweetpea Burger, which was a spiced, sweet potato and chickpea pattie with beetroot relish, caramelised onion, garlic aioli, lettuce ($14). The aroma from the smokers of this American barbecue joint wafted towards us as soon as we stepped through the door. Both of us ordered a meat plate - beef short rib with a side of smoked corn for me and beef brisket with pear and bacon salad for C. The servings were large; we saw some plates of pulled pork go past and the pile of meat sitting on top of the Texas toast was quite impressive. The tender short rib fell off the bone and had a great smokey...

After perusing the menu we settled on sharing a kangaroo fillet burrito, which consisted of 12” tortilla (made by Abbotsford Convent bakery) filled with spiced black beans, pumpkin, fetta, salsa roja, pepitas ($16) We were told the kangaroo fillet would be cooked rare.
