The sushi doughnut craze has hit Melbourne, and Sea Salt Fish and Sushi had not just one, but five varieties to choose from straight out of the gate. Sea Salt is known for it’s top notch seafood, so with great excitement, we came to see what they could do.

We begin with some maki as well as some other creations, such as a ball of sushi rice entirely wrapped in salmon, and a nori cracker topped with a slice of tuna. A small selection of nigiri is also sampled: salmon with lemon dressing, tuna, kingfish with truffle salt, and aburi teriyaki salmon. The sushi here tends to have a higher protein to rice ratio than usual, and the rice is nicely packed and seasoned. An impressive array of seafood then arrives in the form of a sashimi platter, and our hearts start racing. Oysters, salmon, tuna, kingfish, mackerel and roe, amongst others, really highlight the freshness and quality of their produce.

Sea Salt doesn’t just do seafood the Japanese way. The fried fish and crumbed calamari tacos are also delicious, with crispy coatings, large pieces of juicy fish and tender calamari.

It’s now time to try a selection of the highly anticipated sushi doughnuts. All kinds of protein are used to dress the rings of white rice, which underneath, are supported by a crunchy, circular wonton skin overlaying a sheet of nori. Tuna, salmon, soft shell crab and chicken all make an appearance tonight, each paired with ingredients that you might normally find together in more traditional forms. They’re all very good, and consequently disappear in a flash. With the popularity of sushi, and now sushi doughnuts, I wouldn’t be surprised to see more varieties being created.

The asymmetry of the toppings makes for a pretty dish – the large surface area is the artistic chef’s canvas after all – but it also makes them a bit harder to share. I guess the best thing to do would be to have one all to yourself.
