Kolache Cravings

Kolache Cravings is a new micro bakery that has settled into Preston. Owners Phil and Nona have spent a large amount of time spent living overseas. During a stint in Texas, kolache were one of their favourite snacks, and finding they’re not currently in the market in Melbourne the idea to introduce them here was born.

Kolache (pronounced ko-LA-chay) are part of Czech cuisine. Soft and fluffy like brioche, but not as rich and buttery in flavour, they’re beautiful straight out of the oven. An extensive experimentation process was undertaken to find the right recipe that would produce the texture and flavour of bread they were after. The bread and fillings are made in-house with local, free-range ingredients, and the kolache are baked throughout the day to keep the display counter filled. As well as kolache, there are also a range of freshly made pastries and sweets ready to go.

Kolache are traditionally sweeter, both in terms of the bread itself and the fillings. Phil and Nona have reduced the sweetness of the bread, and introduced a mostly savoury range to suit the palate here in Melbourne. We try Bacon, Egg & Cheese, Ham & Cheese, Chorizo & Cheese and my favourite, the Spicy Pizza. Cheese seems to feature a lot in the menu – there’s something comforting about melted cheese in a warm bun – but there are non-cheese options too.

Kolache Cravings - Strawberry and Cream Cheese

Although their initial focus has been on the savoury kolaches, many requests for sweet options from Czech locals has seen them embark on some exploration. One of these ventures was the Valentine’s weekend special with strawberries and cream cheese.

Kolache are so versatile, allowing Phil and Nona to experiment to their heart’s content and regularly produce new flavours for us to enjoy. They’re perfect for eating on a plate, or grabbing on the go. Get your kolache cravings satisfied here – pop in if you have a chance!

    We used to live in Texas where Kolaches are very popular. Phil and Nona’s Kolaches are far superior – I think it’s the lower sugar content. Very exciting that this is just the beginning. So many delicious offerings already. Seeing how passionate they both are about the possibilities of these morsels, I look forward to visiting again and seeing all the new varieties that evolve.

      That’s good to know Natalie! I suppose with the lower sugar content, the quality and flavour of the filling ingredients get to stand out more!
