Etto, South Melbourne

I’ve been wanting to try Etto ever since it opened. The concept of fresh, handmade pasta cooked to order and in a quick, casual manner was very appealing. First you pick the sauce, the serving size, then the pasta. Pizza and sides like garlic bread, salads and wagyu polpette are also available. There isn’t a lot of seating inside, but they cater for takeaway too.

I love truffle so was instantly drawn to the black truffle and salami option. When it arrived at the table a lot of the oil had dripped off the pasta and pooled at the bottom of the plate, but after some mixing it was absolutely delicious. Make no mistake, the other sauce was also lovely, but I preferred the more delicate flavours of the truffle over the heartier prosciutto and Sicilian pesto sauce, which we had with the beef, white wine and vegetable ravioli. I would have preferred the surface texture of the pasta to be silkier but I was happy to find that the pasta was cooked al dente, so it’s not overcooked and soft like most people seem to be used to.

I’m keen to return to taste the other things on offer – there are just so many combinations to try!
