04 Sep Fourth Chapter, Prahran
Fourth Chapter has been hitting the headlines for its brunch offerings that are both photogenic and tasty. Perusing the menu, what caught our eyes in particular were the waffles – even savoury ones! – so we eagerly headed down for a visit.
Conveniently coming as a set of three, the Southern fried chicken bao arrived with pickled cabbage for added texture and tang, and a sriracha aioli for extra kick. Although the bao could have been fluffier, it was a solid dish, and the hero fried chicken had a satisfyingly crunchy batter.
On to the waffles. In both dishes, the batter was crunchy on the outside, but nice and soft on the inside. The colourful and pretty peanut butter s’more waffles came with salted caramel, segments of grilled banana and large, squishy marshmallows. Rich and sweet, this was a delicious dish, but one for sharing. The beetroot and cheddar waffle arrived with a decently-sized piece of hot smoked salmon, sliced avocado, creme fraiche and poached eggs. The beetroot and cheddar was subtle, capers gave the dish added zing, and the flavours and texture all worked well together.
Another dish that’s usually found on the sweet section of the menu is french toast. Here we feasted on an umami-laden savoury version with forest mushrooms, parmesan snow, poached eggs and crème fraiche. It turned out to be one of our favourites. If only savoury french toast were more of a thing.
We rolled out of Fourth Chapter with full and happy bellies. They say good things come in threes. I say good things come in fours too.
