Fledgling Espresso is Carlton North’s newbie cafe. After spending time working at cafes such as Penta and Tinker, Connor has struck out on his own together with his mother, who’s the one in charge of the kitchen.

Tender sweet potato and squeaky halloumi come together in their flavoursome Stack, together with tomato, roasted beetroot puree and cumin yoghurt. Slow Roasted Mushrooms are seasoned with thyme and garlic, and the chilli cashew cream slathered on the sourdough toast does have quite a decent hit of spice.

The texture of the Reeses peanut spread panna cotta is quite dense, but the flavour is outstanding. Shortbread, fresh fruit and coconut create on the plate interest in flavour and texture.

Fledgling Espresso is an exciting addition to the neighbourhood that only has room to grow – onwards and upwards!
