4Fingers Crispy Chicken has arrived from the shores of Singapore. It’s Singapore’s second-largest chicken brand after KFC, and Melbourne’s Bourke St store is the first to open in Australia.

It’s counter service here at 4Fingers, but you get a handy buzzer to notify you when the order is ready for collection. The chicken is made fresh to order and hand-painted in sauce. No artificial flavours or MSG to be found. As with Korean Fried Chicken, the chicken is fried in such a way to render out the fat, leaving crackling skin to enjoy. Having less fat under the skin is not only less guilt-inducing, but also enables it to stay crunchy for much longer. Fried chicken can be had in soy garlic or hot sauce, or a mixture of both. My pick is the hot chick.

4Fingers also offers rice boxes, salads and crispy seafood dishes. One vegetarian option is the tofu rice box, which features firm tofu with crispy exteriors. The katsu sandwich is a crispy fried bao filled to bursting with chicken and a creamy and refreshing kimchi slaw. Their fries are not as crispy as the chicken, and could do with more seasoning, but fortunately they get the main star right. Their BFF burger contains a fat and juicy fried chicken chop, garlic sauce, fresh button mushrooms, and either soy garlic or spicy sauce. BBFF is the same thing, just with a charcoal bun. I’ve never had a chicken burger this succulent before, nor one that stayed crunchy after sitting on the table for 20 minutes.

Everyone has their favourite place for fried chicken; 4Fingers is worth a try. Handy hint: there’s a hand washing basin towards the back.
